Year 2: Celebrating Christmas and being grateful for the year!

Hey rookie mommas,

This might be the last blog post that I'll have for you before 2016 ends. I'm pretty much overwhelmed with work load, taking care of Arya, wrapping presents, and making sure Christmas is gonna be a bang! 

This Christmas is gonna big for the family because a lot of our relatives from my mother's side came home and it is a family tradition to spend Christmas with my grandmother. Busy! busy! busy!

You probably notice the decline of my post. I have to blame internet speed and Korean novelas for not allowing me to update my blog. Whenever I do plan to make a new post for you, I ended up clicking VLC and watching Korean novela. I'm hooked! But, no worries, I promise 2017 is gonna be different. :)

I hoped I was able to do at least a few post to help you out this Christmas but I am really swamped with other stuff! Jeez! But, I hoped you follow me on Insagram coz I update it all the time!

There's a lot of things I wanted to be thankful for this year but I wanted to put emphasis on the following points, as a rookie mom,

I am thankful for:

My husband, who has an unending string of patience on my tantrums and self issues, who didn't give up on me on hard times, who keeps loving and fighting for our family.
My inlaws, who have helped me so much in taking care of Arya in any way possible.
My mom, who supported me all the way, and being all the kinds of panikera, na minana ko, and who kept me motivated to chase my dreams.
My sisters, who bugged and annoyed me every now and then,
My clients, who trusted and believed in my blog and what I stand for.
My Arya, who gave me so much happiness, back aches, and headaches. giggles!
My friends, who helped me keep my sanity, in most times.
My work, who brings financial steadiness to my family.
and to the universe, who brings me everything that I ever needed.

2016 has been a roller coaster ride for me, surviving year 1 of motherhood was not easy. I am hoping year 2 will be manageable.

I hope your year as a new parent gave you new strength and powers. Remember to wear your hero costume always, rookie momma, the world needs your love.

Our simple Macaroni Salad recipe

Cooking time!

My family and friends knows that I'm not good in anything that involves cooking. The dishes that I know how to cook are very limited and it is usually revolved around canned goods, pancit canton, and frying potatoes. I know, I know, I have a husband and baby to feed. 

Luckily, we still live in my in-laws and my mother-in-law is such an awesome cook! She taught me how to cook my very first Tinola which, by the way, I miserably failed. I accidentally added too much fish sauce. Ugghhh...

Now, now, the star of this blog post is all about me learning how to prepare her special Macaroni salad! It is a fav comfort food in the house especially when it is frozen so we're really used to having macaroni salad even though there is no special occasion. This time, I volunteered to go to the Palengke to get the ingredients.

Rookie Mommy PH Macaroni Salad Recipe:

1. Macaroni Pasta - you can use any brand you like. For this one we are using the Royal macaroni pasta in yellow packaging.
2. Lady's Choice Mayonnaise - we like to use the pack instead of the glass mayonnaise because we don't want any left overs, plus the quantity is good enough for the batch that we are preparing. I don't think we have ever used any other mayonnaise brand before. It's our go-to Mayonnaise!
3. Chicken Breast - we boil it, remove the skin, and cut it to pieces.
4. Pineapple chunks
5. Carrots
6. Bell peppers
7. Salt
8. Sugar
9. Pepper
10. Onions
11. Cheese

This is funny, but we don't have a huge bowl to mix all of them together to we get the cover of our Turbo Broiler and there we mix and mix until the taste is good to our liking.


Nomnomnom!

Looks yummy, right! We add the grated cheese only when we're ready to serve and eat. Don't add them and store them in the fridge as it might ruin the balance of taste overtime. :)

Sitio Naubo: A Christmas Story of Togetherness

Just how important light is to us?

Sitio Naubo is a small town in the outskirts of Dumaguete, Its residents thrives in darkness. They don't have electricity. Walang kuryente?  You might ask, in today's modernization how come there are still places left in the dark? And your follow-up question will be something like, Paano sila nabubuhay doon?

Just watching the clip made my eyes tear a bit. For most people, Christmas is celebrated by having material gifts, going to parties, having a feast. But for the community of Sitio Naubo, Christmas is all about being together, being with family, friends, and loved ones. They value what they have and stayed positive human beings despite having no electricity - which I believe should have been part of Maslow's hierarchy of needs in this generation. 


What melts my heart more is how they keep their positivity despite having less. They just have enough of what they, rather, they make things work. 


In all honesty, I as a mom who is capable of living averagely, was inspired by their way of life. Focus on what you have rather than what you don't have, don't loose hope for things will be just fine, and family, friends, and loved ones is all that you need to celebrate Christmas.

Lady's Choice campaign is overwhelmingly heart-felt. It must have been a difficult task to light up a sitio but I am sure those difficulties became easy to accomplish when you see this kind of community. I wish other communities who lives in the dark can get their light too. I hope people will start caring more for these kind of communities.
